Amongst learning new languages and instrumentsthe Because team have been keeping their fingers busy by getting crafty with cooking. Despite the trials and tribulations that learning new can recipes entail, we’ve managed to whittle down our selection of culinary successes to some favourites that are so delectable, we couldn’t not share.

This week, our Project Co-ordinator, Nasreen Osman explains why this vegetarian recipe should be added to your dinner rotation.


As Carmen mentioned in last week's recipe, eating out is the crux of conversations. It's the setting for getting lost in conversation over lunch and friendly debates breaking out with fellow dinner guests. And we can't forget about the food, of course. My mind often wanders back to the freshly made cardamom buns from my favourite Swedish cafe as well as the guac-filled Chipotle bowls shared with friends as we pat ourselves on the back saying "we deserve this". But until we can revisit our favourite places to wine and dine, recipe books will be bought and online recipes bookmarked as we try to turn our self-confessed foodie selves into self-proclaimed chefs.

 

During this lockdown, one cookbook I've been devouring (figuratively) is the The Good Life Eatery Cookbook by Shirin Kouros and Yasmine Larizadeh. The recipes are all based around fresh, attainable supermarket ingredients and simple, clean eating. While I can vouch for the array of colourful recipes featured, as someone who often googles "one pot recipes" and "quick, easy, 30 minute meals", this butternut squash and aubergine stew recipe is exactly that and more. 



This recipe is a tangy, wholesome and heart-warming dish that will undoubtedly impress your housemates as they question your sudden culinary prowess. The dish is easily achieved with few ingredients and minimal prep but maximum impact as Shirin and Yasmine warn us of the "flavour rollercoaster" that ensues (I can attest to that). But of course, ingredients can be switched out and many of the recipes have tips on how to modify the recipe to suit your pantry and taste so that there's something for everybody – vegans, vegetarians and meat-lovers alike.
